In the space above Etica on Gilles Street, we will soon be seeing a restaurant with a very specific vision.
Allegra Dining Room, once it opens has been visualised as a balance between classic experience and an authentic approach to dining, with a seasonal plant-based menu and a wine list that reflects that ethos.
With an intimate space that fits only 28, Allegra promises an abundance of hospitality from Frederico and Melissa Pisanelli who will be leading the floor.
Guests are offered a journey through the seasonal showcase with traditional and innovative cooking methods prized.
Leading the kitchen is chef, Elliot Vials who says “The aim is to create a menu that respects the produce, giving ingredients the energy and time they deserve, whilst appreciating and preserving the hard work that comes before us.”
Focusing on flavour and taking inspiration from local and international techniques has led to a full course dinner, entirely plant-based. Accompanied by an evolving wine list that features classic and contemporary options to reflect the seasonal theme.
The full course menu compiles 10 dishes and is prized at $70pp. Reservations are taken online but walk-ins will be accommodated with a bar menu.
Allegra Dining Room is set to open on August 1. Serving dinner Thursday – Sunday evenings.
