“We’ve been cooking every night for two weeks straight to perfect the chicken and the processes,” says Joshua Rivers, of Brighton’s CREAM.
Rivers is referring to what he deems “a horrendously kept secret.”
A brand new venture, Grumpy B’s House of Fried Chicken.
Grumpy B’s is slated to emulate fried chicken giants in the US, with Rivers taking inspiration from Chick-fil-A, Hattie B’s, and Popeyes, with particular homage paid to a 2018 USA trip.
Rivers says Grumpy B’s will operate out of CREAM during the evening, when the venue is not currently utilised.
With a menu dedicated entirely to fried chicken, chicken sandwiches, and sides, it is Rivers’ hope that this will maintain a focus on quality. Also, he says, the team “really like fried chicken”.
Initially, the restaurant will feature a condensed version of the official menu, with Rivers commenting on the need to test the kitchen. In his words, if Grumpy B’s goes “gangbusters”, it will be transported to its very own local location, and apparently Rivers already has a venue in mind.
“The more support we receive the better the odds of this monster coming to life in its own spot with other locations to follow,” says Rivers.
CREAM and Grumpy B’s are located at 4/49 Jetty Rd, Brighton.
