Adelaide’s West End has revealed an underground hidden gem for cocktail enthusiasts: trap. The cocktail bar aims to captivate the taste buds and hearts of cocktail lovers with its intimate setting and a team of expert bartenders.
Lachlan Gunner, owner of trap., is known for his enthusiasm and drive in showcasing his passion for cocktail design and venue management. He’s one of five of Australia’s finest bartenders, currently vying for top spot in The Diageo World Class Bartender competition.
With his expertise and creativity, Gunner contributes to the flourishing nightlife and diverse palate of Adelaide.


“My interest has always been in flavour. Going back to my first-ever interview in the hospitality scene, I said first up that I was interested in playing with flavours. That’s where making cocktails started, and the consistent theme has been flavour,” Lachlan expresses.
“The palate is like a muscle; if you don’t use it, it goes away. And good flavor is everything a good drink is about.”
Since its recent opening, trap. has already gained attention from bartenders in the area, attracting interest from the hospitality scene.
“We’ve only just opened the doors over the past couple of weeks, and we’ve found a lot of interest from bartenders and hospitality workers in the area. [trap.] is quite different from other bars. It’s only a small space, but we’ve had feedback that people have loved the drinks and the homey and fun vibe,” Gunner shares.
“The general public is loving it as well. 90% of the drinks people choose from are our cocktails, and at the moment we have only 3. People will often try them all starting at the top of the menu. The lemongrass mezcal has been most popular so far.”




As guests step into trap., they will discover a 20-seater underground cocktail bar that promises a unique experience focused on genuine service and fostering connections with customers. Bar manager, Jack Somers, highlights the importance of creating a welcoming atmosphere.
“A big welcome is the bare minimum – and we want to make sure every guest gets more than that. It’s a major focus we have as a team,” Somers emphasises.
While trap. takes pride in its friendly ambiance, its dedication to crafting exceptional drinks takes centre stage. Each cocktail showcases the team’s favourite flavours, resulting in innovative and tantalising combinations.
One standout creation is the ‘Strawberry Gin’ cocktail, featuring a delightful infusion of Caramilk chocolate, lending it a salted caramel twist. The addition of clarified milk provides a creamy texture, completing this harmonious blend.
As trap. aims to elevate Adelaide’s cocktail culture to rival other major hubs across the country, they have plans to continually expand their drink menu.
“We want to make sure we’re doing our best to showcase an Adelaide cocktail culture that’s on par with other major cocktail hubs around the country – and the drinks are the best way to do that,” affirms the team.
Beyond the exquisite drinks, trap. offers an inviting and carefully curated atmosphere with a balance of music, ambient lighting, and engaging conversations with the staff. It’s an intimate space that invites patrons to unwind and savor the moment.
