NOW OPEN: Fire and Vine serving mediterranean and Australian cuisine with a modern twist

New house of steak and seafood ‘Fire and Vine’ will serve a modern twist on Mediterranean and Australian cuisine in Glenunga.

The restaurant is located at Adelaide’s former steak and seafood institution Cork & Clever and is slated to open in October.

The evocative and emotive name ‘Fire and Vine’ was created by owner George Melissourgos with his father and sister- after some discussions (and a bit of convincing his father), the name was set in stone.

“The name is about the meat that gets kissed by the fire and using good proteins, good meat treated well with really good chefs, and really good wine to accompany them to showcase the beauty of South Australian produce,” George says.

George says quality and consistency will be very important at Fire and Vine and they will have a focus on good quality meat and preparing it right.

For the food, George has left it in the hands of head chef Jamie Bennie. Jamie hails from Scotland, where he was named ‘Chef of the Year’ twice in a row and has worked in many places around Adelaide- most recently Coriole Vineyards.

The Sous-Chef is the talented Neil ‘Nelly’ McGlew, who is originally from England, and has been in Australia for around 14 years.

“The chef is running with what he’s passionate about, he can show what’s capable of. It’s all about having the team actively engaged and passionate,” George says.

“People can expect massive flavour bombs, that is what the chef really specialises in. For example, with the mac and cheese with truffle, you’ll taste the truffle through the dish- it is really about flavour explosions.”

As ‘The House of Steak and Seafood,’ the menu will showcase the finest cuts of meat and premium seafood, so expect rich flavourful steaks, colourful sides and fresh seafood paired with the perfect drop.

The restaurant also doubles as an aperitivo bar with a wine list showcasing South Australian and international wines, with wines you might not see in a bottle shop, as George wants to bring smaller wineries into cities.

The venue has also received a total revamp. George spent two months doing the renovations, stripping it down and starting fresh. He has taken out walls, redone the entire kitchen and floors, rebuild the bar- and besides tasks such as plumbing and electrical work, he has done most of it himself.

“The atmosphere is going to be modern classic, a bit of an old-world charm, and the star is always going to be the food,” he says.

“The old press-studded leader side to the bar is highlight. We have gone for pressed tin in gold for front of the bar which goes well with the fluorescent lights underneath and porcelain on top of the bar. Gold, rustic and metallic tones have been used throughout the venue, almost like a 1950s style, which ties in with the old world charm.”
