Prospect Hotel & Cellars celebrated its long awaited opening on Friday after the announcement that the popular food and drink stretch would finally get a pub.
The bustling stretch of Prospect Road between Fitzroy Terrace and Regency Road has been the place to go for a stroll and a bite to eat for a number of years now, and it seems to keep getting better. But, there has been a noticeable pub-shaped hole in the Prospect Road strip’s hospitality landscape.
Late last year, three hospo heavyweights set out to change this. Business partners and long-time friends Marc Huber, Josh Voigt, and Dale Wostikow opened the doors to the brand-new Prospect Hotel & Cellars on Friday.

The hotel will be open seven days for lunch and dinner, and of course, cold beers and local wines. At the moment, the hotel is open to walk-ins only, with bookings opening up in early April.
Ahead of the pub’s opening, Marc shared, “I’ve called Prospect and its surrounding areas home for over a decade, and throughout that time, I’ve always dreamed of opening a hotel here.”
“I feel incredibly fortunate to have been approached by Dale and Josh to collaborate on this venture. We share strong values and a common vision of hospitality, believing that a pub serves as the heart of a local community. Together, we’re excited to contribute to Prospect’s already vibrant and thriving character.”
The venue will accommodate around 200 patrons across multiple spaces, including a main bar and dining room, a function area, an alfresco section, and Prospect Cellars – a boutique bottle shop accessible from the rear car park.
On the food menu you’ll find everything from chicken and plant based schnitzels, Wagyu Scotch fillet, lamb backstrap, gourmet burgers and plenty more.
But why hasn’t Prospect had a pub before now? It seems that a dispute spanning nearly a century, involving planning authorities and the Methodist Church’s historically strong presence in the area, left a lasting impact on the suburb’s ability to establish a pub. The Empire Hotel is the closest pub on Prospect Road, but it sits in the suburb of Kilburn, a ways further north of Prospect and well out of the suburb’s main stretch.
Good Prospects Group has been killing it in the hospo scene with Sideways Liquor on Prospect Road, and Adelaide Wine Markets already under its belt.. With the new inner-northern suburbs venture, the group is doubling down on its vision to keep growing in Bowden and Prospect’s buzzing hospitality scenes.
Prospect Road is an absolute hotspot for brunch with incredibly popular spots like Bottega Bandito, Cafe Komodo, and Cotto. It also offers some of the best dining with Sunny’s Shop and Mr Chan (Rosemont Hall), Anchovy Bandit, Meze Mazi, and heaps more. You can even go out for a classy drink at Sideways Liquor or Wassail Wine Bar, but having a pub will totally elevate the energetic stretch of pedestrian-friendly road.
