‘High Spirits’ is located just off iconic Hindley Street and is the culmination of the owner, Jamie Tierney’s lifetime of love and passion for high end cocktails mixed with an upbeat atmosphere.
As soon as you venture up the staircase of the 1890’s Quelteller House building you will be greeted with friendly staff in Hawaiian shirts and the sounds of hip-hop and soul music.
Guests can make themselves comfortable in one of the venues luxurious booths whilst the bartenders create something unforgettable for you.
There is a wide range of cocktails to choose from as well as spirits, beers, wines, and non-alcoholic options where everybody is welcome.
Jamie says he will be hoping to mix a bit of fire into the equation as well.
“We want to make it a high-end cocktail bar with over-the-top cocktails, we might even set things on fire and have a bit of fire breathing in the bar,” Jamie says.
“I have a very good friend Rick Marson from Melbourne who is a gun behind the bar and has won several competitions, he is a high calibre bartender.
“He will be great for helping to get the staff trained up and help with the cocktail list as well.
“People have described High Spirits as a real Melbourne style compared to Adelaide.
“We want people to get a taste of our menu from classic cocktails that have stood the test of time to house cocktails that will keep you coming back.”
High Spirits is open Thursday to Sunday from 6pm to 2am.
