Food connoisseurs and SA talents, James Spreadbury (Noma), Olivia Moore (LOC DOT COM), and Tom Campbell (The Summertown Agrostologists), have yet again collaborated their deep history and knowledge in food and wine, and created a must-go spot in Piccadilly.
Showing us their magic during their collaboration at LOC, Campbell and Spreadbury joined Moore and rocked a seasonal menu, giving us a preview into what this team can accomplish together.
With local and international experience, their inspiration for the new place is drawn from European style dining; an all-day dining bistro where your morning coffee and pastry can turn into a glass of wine and savoury snacks.
Within their menu, ferments, veggies, proteins, and carbs, shine on their own, but also work harmoniously together, to create delicious plates, bringing us back to country style foods. Although simply presented, you can feel how meticulous the chefs are with every aspect and detail of what they serve.
The way food is presented perfectly sums up the philosophy of the new space, simplicity, great-quality and no hierarchy over ingredients by tampering too much with them. Utilising produce from Tim Spreadbury’s market garden, James’ brother, the menu changes daily and is hyper-seasonal promising diners a new experience each time they visit.
Stepping into Thelma, you’ll sense the spirit of LOC DOT COM, Moore’s intimate CBD wine bar, woven into the ambiance. Familiar touches like the classic chalkboard and vintage plates playfully reappear, almost as if Thelma is LOC’s charming country cousin, now residing in the Adelaide Hills.
Thelma’s wine list is a thoughtfully selected mixture of local and international producers, who source fruit that is grown using environmentally sustainable methods, or grow organic/biodynamic fruit themselves.
When you walk in, you may forget that you are in Adelaide. This space transports you to a European neighbourhood diner with a small retail selection of pantry staples and fresh products like their house-made sourdough and sweet and savoury baked goods. It’s a great addition to the eatery, allowing customers to take home what they may have just tasted.
The team at Thelma subtly encourage their guests to enjoy the simplicity of food without over-dressing or drowning really great ingredients.
