McLaren Vale’s Pizzateca and Adelaide’s Madre have come together in an exciting new collaboration called One Sneaky Cheetah (OSC).

It’s a bold and ambitious new project where the team behind two of SA’s favourite pizza makers bring their magic together cooking up wood oven pizzas in Croydon.

Quietly opening over the Christmas break, One Sneaky Cheetah has taken home inside a warehouse that once served as a panel beating workshop hidden between McDonalds and On The Run.

One Sneaky Cheetah uses Neapolitan pizza making techniques with a focus on speed.

It’s experimenting with untraditional flavours, but with authentic pizza making methods. ‘OSC’ is Naples meets Croydon: pizzeria meets Aussie pizza bar.

The team behind One Sneaky Cheetah say it all starts with the ingredients. Their pizza sauce is lovingly made from scratch, using locally grown Roma tomatoes.

They are sorted, boiled, crushed and bottled honouring a long standing traditional family method. All of the toppings and ingredients are fresh, locally sourced and prepared to ensure the pizzas have maximum flavour. There are no shortcuts – even the olives are hand pitted!

A quick glance over the menu and you will find Aussie favourites like ham and pineapple, meat lovers and a smoky BBQ chicken, alongside Italian classics like a traditional Margherita.

What you won’t find however is mushy, sugary pineapples from a can, or rubbery shredded bullets of ham. Fresh pineapples are hand sliced like ribbons of prosciutto and placed alongside leg ham sliced off the bone. There’s a focus on high quality simple ingredients, full of flavour and fresh.

The ‘OSC’ dough has been created with a blend of Australian and Italian flour. Each dough ball rests for 48 hours and is then hand stretched before it is topped with the ingredients of choice.

OSC cooks their pizza’s in hot wood fired ovens imported from Italy. The result is pizza cooked in under 90 seconds which is lighter, fluffier, tastier and healthier.

The idea behind the concept stems from its name. With the cheetah being the fastest animal on earth, one of the fundamental ideas behind One Sneaky Cheetah is that no one should have to wait too long for dinner.

OSC ovens can produce over 100 pizzas per hour with two of them on the go. The focus is speed and flavour without compromising on quality.

As well as pizza, OSC offer the beer to go along with the piping hot deliciousness. OSC have brewed their very own One Sneaky Lager which was created to pair perfectly with their range of pizzas.

The Italian styled lager is served ice cold in a can and can be enjoyed whether you order your pizza takeaway or dine in the venue itself.

One Sneaky Cheetah’s focus is to have some fun, rip up the traditional pizza bar script and produce the best possible pizza as they can and fast.

One Sneaky Cheetah is also available on UberEats and MenuLog.
