Prospect has a new destination for food lovers with the opening of My Maria today, just in time for the long weekend. Located on Prospect Road, My Maria offers a warm and inviting atmosphere paired with authentic, heart-warming Italian cuisine that draws inspiration from traditional home-cooked meals.
This new dining spot is set in a venerable food hub and aims to bring the nostalgic flavours of a typical Italian household to the local community. Chef Adamo Guglielmucci, the brainchild behind My Maria, aims to recreate the familial dining experience where every dish not only delights but also tells a story.
“We wanted to create a space where diners feel like they’re dining at Maria’s dinner table – a place where every bite tells a story and every dish feels like a piece of home,” said Head Chef Guglielmucci. “Our goal is to celebrate the essence of Italian hospitality, where every guest is treated like family.”


The restaurant prides itself on utilising high-quality, locally sourced ingredients, celebrating the rich and bountiful produce South Australia has to offer. From farm-fresh vegetables and succulent meats to handmade cheeses, the ingredients are meticulously selected to craft dishes that promise an authentic and unforgettable taste experience.
For those keen to try the offerings of My Maria, standout dishes include the Linguine Marinari and Fritto Misto Di Mare. The Linguine Marinari features a medley of local, seasonal seafood tossed with chilli, garlic, fresh basil and is flamed with brandy and white wine, available with either Napoletana or Bianco sauce. For those who enjoy a mix of seafood, the Fritto Misto Di Mare offers grilled local flathead, prawns, calamari, and whitebait. These are lightly floured and served with lemon, sweet chilli dill aioli, and chips.
