Ray’s by Out in the Paddock at Burnside Village is preparing for a major refresh, with the popular Burnside Village kiosk undergoing a full rebuild designed to better reflect the brand’s signature style and growing food offering.
“We’ve just started our renovations. We’re hoping it’ll take about six weeks, but we’re knocking down the existing kiosk in Burnside Village and completely rebuilding it,” owner Ray Dahdah says.
The rebuild will lean into a clean, modern design layered with warmth, florals, and some special experiential elements that have become synonymous with the Out in the Paddock events, catering, and styling brand.
Ray says, “It’s about the styling, the little touches, the service, and the quality. We want it to feel modern, but also really approachable.”

Perhaps the most exciting addition for the new cafe will be a bar section opposite the kiosk where you’ll be able to experience whatever Ray’s is serving up at the time.
“We’ll have a pop-up bar that we change weekly or monthly,” Ray says. “It might be something like champagne and oysters, a caviar bar, strawberries dipped in chocolate during school holidays, or a soup bar in winter,” he hints. The exact offerings are still being finalised, but the experience promises to be fresh and exciting.
While this intriguing new section will surely bring plenty of new faces, Ray assures us the kiosk will still have that same personable charm, just with a bigger, brighter, more efficient space.
“We want to elevate the shopping centre experience, keep it fun, but still make it approachable,” Ray says.
During the refurbishment, a Ray’s pop-up will operate nearby so you can pop in as normal, grab yourself a coffee, and maybe have a sticky beak to see how the refurbishment is tracking.
The pop-up cafe is keeping things simple with a focus on the drink side of things. Coffees, sodas, and San Pellegrino will be available, while a range of cakes, biscuits, and sweet treats will be tempting you from the cabinet.
“When we took over the space, we stepped into what was already existing, and it wasn’t built for the volume, the business, or the type of offerings that we’ve been doing.”
Ray says it’s been a challenge bringing to life the grand vision for the cafe in such a limited space. That’s the main catalyst for this overhaul.
While the space has served as a successful launchpad, Ray says it never fully reflected the Out in the Paddock identity.
Ray tells us the space was built 12 or 13 years ago for the purpose of slinging just coffees and a few desserts. What it doesn’t support is the range of salads, panini, bagels, and snacks that Ray’s is serving.
“It also wasn’t a true reflection of what we’re about aesthetically or from a brand point of view,” Ray says. “It was a neutral space, but now we’re excited to add our flair and that Out in the Paddock touch.”
Outside of Ray’s, Out in the Paddock is always busy. Lately they’ve been hosting a full calendar of private events, a pop-up in Rundle Place, and gearing up for a new cafe in Eastwood Private Hospital. The company is also exploring how they can bring back their stylish, elegant, botanical-toned temporary lounge Soho Supper Club. Keep an eye out!
The refreshed Ray’s by Out in the Paddock is expected to reopen in late February bringing all of Out in the Paddock’s extravagance and class with a new and improved offering that Burnside has already come to love.
