Recipes from owner’s family restaurant in Saigon inspire new Adelaide CBD eatery

A husband-and-wife team has opened a new Vietnamese eatery on Waymouth Street, bringing recipes from a Saigon family restaurant to Adelaide with slow-cooked pho, crispy roast pork and fragrant grilled chicken on the menu.

You know that kind of humble local spot that looks unassuming from the outside, but draws you straight to the counter with irresistible aromas drifting from within?

That’s exactly the kind of charm new Vietnamese spot Saigon Signature has. At 4/8 Waymouth Street, the new-to-the-block eatery fits neatly among a stretch of CBD lunch spots, adding another tempting aroma to the block. It’s the kind of strip you go back to every day on your lunch break, hitting a new establishment each time.

And just like any delicious eatery, there’s more to the story than meets the eye.

Saigon Signature is owned and operated by husband-and-wife partners, Toan Hua and Ngan Nguyen.

“Ngan was born and raised in Saigon, which is one of the reasons behind the name Saigon Signature. She designed the menu and learned many of the recipes from her family’s restaurant in Vietnam. Together with Toan, the recipes were refined and adapted to better suit Australian culture and local tastes,” they tell us.

Toan was also born in Vietnam and moved to Adelaide when he was 15.

“He has a strong understanding of both Vietnamese and Australian culture. His family has been running businesses in Adelaide for almost 20 years in a similar industry, and Toan grew up in a business environment from a young age.”

While studying at the University of Adelaide, he helped manage the family business, before later gaining professional experience working at a bank and in the finance department of a private Adelaide company.

“After having our two sons, we decided to start our own business so we could manage our time more flexibly while also sharing Vietnamese cuisine with the Adelaide community,” they share.

“Ngan has a natural passion and talent for cooking and flavour, while Toan has strong experience in business operations and management. We felt that combining our strengths was the perfect opportunity to create a Vietnamese eatery that reflects both authenticity and accessibility for local customers.”

That sense of balance carries through the space itself. While Waymouth Street is already home to a lively mix of eateries, Saigon Signature brings its own warmth to the strip. You sense it as soon as you step up to the counter and are greeted with a big, genuine smile.

“We’ve really enjoyed being part of Waymouth Street. There are many restaurants and a wide variety of cuisines from different cultures, which creates a vibrant and welcoming atmosphere for both businesses and customers,” they say.

“It gives people the opportunity to explore different food experiences all in one area, and we’re happy to contribute Vietnamese cuisine to that community.”

Inside, the couple took on the fit-out themselves, shaping the space with the same hands-on care that defines the food.

“We purchased the shop and completed the renovations and decoration ourselves to create the atmosphere we had envisioned for Saigon Signature,” they say.

“We wanted the space to feel warm, cosy, and peaceful, somewhere customers can feel comfortable relaxing while enjoying their meal. Our goal was to create an inviting environment that reflects both simplicity and hospitality.”

And when it comes to what to order, the couple has a few favourites close to their hearts.

“One of our favourite dishes on the menu is the crispy roast pork. We love the contrast between the juicy, flavour-balanced meat and the perfectly crunchy crackling skin,” they say.

“Another favourite is the grilled chicken, which is tender and juicy with fragrant spices that become even more aromatic when grilled. And of course, pho is very special to us. Our pho broth is slow-cooked to create a clear yet rich and aromatic soup with the balanced flavours of a traditional Saigon-style pho.”

It’s this combination of family recipes, Adelaide business know-how, and a genuine love of sharing Vietnamese food that gives Saigon Signature its pull. It may sit modestly on a busy CBD lunch strip, but step inside and you’ll find a shop built on heart, family, and the simple pleasure of a really good lunch.
