With a career spanning over 2 decades, Moss’s extensive experience spans across various top-tier restaurants in Australia, Europe, and Canada. He is well-known in the Clare Valley for his innovative approach to local cuisine, having previously maintained the highly successful Terroir Auburn with his wife, Annika Parish. Terroir Auburn received consistent recognition, securing an Australian Good Food Guide Chef’s Hat annually for 12 consecutive years until its closure in May this year.

Moss’s forthcoming contribution to Skillogalee is eagerly anticipated both by the local community and visitors to the region. His commitment to regional dining and the use of local ingredients aligns well with the values of Skillogalee. Speaking about his new position, Moss shared, “The vision for Skillogalee moving forward is something I had to be part of, and I can’t wait to get to work on deepening the essence of its dining experience,” he stated. Further elaborating on his plans, he added, “I am very much looking forward to bringing my knowledge of all things local, and working side by side with the incredible talent the entire team already has, to create an unwavering Clare Valley experience.”

Guy Parkinson, Skillogalee’s Head of Operations, also shared his excitement about welcoming Moss to the team. “We are thrilled to welcome Dan to Skillogalee. His outstanding culinary skills and commitment to regional locavore dining align perfectly with our vision,” Parkinson remarked. He also highlighted the formidable team that Moss will join, which includes Head Chef Tristran Steele and newly appointed Restaurant Manager Priscila Cunha.

This strategic recruitment promises to enhance Skillogalee’s already distinguished reputation in the culinary world, particularly emphasizing the unique flavours and offerings of the Clare Valley region. Dan Moss’s passion for local produce and his culinary expertise are expected to not only attract local diners but also tourists seeking an authentic regional dining experience.

The Skillogalee Estate, renowned for its fine wines and scenic vineyard vistas, aims to enhance its visitor experience with this newest addition to their team.
