Renowned SA Chefs Join Forces To Design Exclusive Menu For SA4SA Bushfire Appeal Gala

Simon Bryant and Paul Baker will work alongside Gavin Robertson to deliver a menu with true SA flavour, paired with a variety of wines donated by SA wineries.

As a result of the SA4SA Bushfire Appeal Gala Dinner selling out in less than two weeks, as well as smashing its $100,000 fundraising target with more than $150,000 raised, a new target of $250,000 has been set.

Shaping up to be an evening both incredible and heart-warming, guests of the Gala will hear stories of tragedy and triumph from communities coming together to overcome unfathomable adversity over a delicious three-course menu celebrating SA produce matched with SA wines.

Simon Bryant (Director of Dirt(y) Inc. & Event Director for Tasting Australia) and Paul Baker (Head Chef of The Botanic Gardens Restaurant) will work alongside Gavin Robertson (Executive Chef at Adelaide Convention Centre) to deliver a menu with true SA flavour.

The chefs wanted to create a special food experience for guests of the Gala and will each be preparing one course.

Simon Bryant will kick things off with his entrée of MSC certified Spencer Gulf king prawn, KIS ‘O’ gin and cucumber chilled soup. Gavin Robertson will follow strong with a main of Braised Murrylands Lamb neck with saltbush crusted rack, roast onion and eggplant soubise, carrot puree, butter poached kipflers, spinach oil, wine reduction. Lastly, Paul Baker will cover dessert, featuring fig leaf ice cream, caramelised fig, toasted frangipane, burnt meringue, and fig leaf oil.

Each course will be paired with a variety of wines and beverages donated by South Australian businesses, including Yalumba, Hentley Farm, Sparkke, Bickfords Group, Jacob’s Creek, Howard Vineyard, Seppeltsfield WInery, Kirrihill Wines, Manyara Wines, and Ubertas Wines.

Gala guests will also have the opportunity to purchase and win some incredible prizes that have been flooding in from corporates and local businesses alike through raffles and auctions on the night, including dinner with Marco Pierre White, a Barossa Valley getaway valued at $22k, or even the chance to cruise in a Ferrari racing car.
