SA’s Little Tin Co. launches sustainable craft canned seafood

South Australia’s Little Tin Co. is making waves in the local seafood industry following its official launch as Australia’s only craft cannery.

Next time you’re putting together a gourmet platter for friends, making sandwiches for the kids, or wanting to add some flavour to pasta, look no further than Little Tin Co.—a pioneering brand right here in South Australia that specialises in sustainably sourced Aussie seafood in a can.

Founded by husband and wife team Dan and Rachel Weeks, Little Tin Co. is making waves in the local seafood industry following its official launch last month as one of Australia’s only craft canneries. Gone are the days of storing basic tinned fish in your pantry for quick, cheap meals or a filler for sandwiches—tinned fish is making its mark as a gourmet delicacy, and Little Tin Co. is pathing the way here in Australia.

‘The launch of our small batch cannery marks an exciting milestone for Little Tin Co.,’ said Dan Weeks, founder of Little Tin Co. ‘Our goal is to showcase the unmatched flavours of Australian seafood and support local communities, all while prioritising the health of our oceans.’

Dedicated to providing a gourmet experience in every tin, the team at Little Tin Co. have worked with chefs, cooks and foodies to ensure that all of the fresh, quality ingredients used hit the spot when it comes to elevating the flavour or nutritional value of any recipe, snack or platter.

In addition, each can is thoughtfully prepared and packed by hand right here in SA, using timeless methods originating from Mediterranean seaside villages that have been passed down through generations, delivering optimal freshness and premium flavours.

With the launch of Little Tin Co. comes a range of delicious options perfect to pimp up any platter, provide a protein-packed snack, or dress up any dish in the kitchen. There’s the Port Lincoln Sardines soaked in Australian oil, the Hot Smoked Kingfish and Vermouth Pate, or the Smokey Port Lincoln Mussels with Whisky (yum!).

The team are also excited to be releasing some new products later this year also. ‘We’ll be continuing to source under-utilised species and pairing them with quintessential Australian ingredients to create our products,’ says Dan. ‘The species also have to be abundant—otherwise, we won’t touch them.’

And when it comes to sustainability, Dan and Rachel are focused on providing environmentally responsible seafood to consumers, carefully considering each species, where it was sourced and that ethically responsible harvest methods are used, ensuring a more resilient and sustainable food system. ‘We are dedicated to delivering exceptional quality seafood to consumers while promoting sustainable practices in the seafood industry,’ says Dan.

The team at Little Tin Co. are excited to finally be sharing their new little business endeavour and their love for quality Aussie seafood with the people of Australia and the world. ‘In 2020, we found ourselves isolated on Deer Island in Tasmania,’ says Dan. ‘In a weird twist of fate, it was the perfect spot to sit out COVID, and we had taken three months’ worth of supplies with us, including many cans of tinned fish.’

‘We began to question why tinned fish had to be mass produced from sources unknown and shipped across the world when we have an abundance of quality, traceable and sustainably produced seafood in Australia.’

With shared backgrounds in commercial fishing, conservation and sustainable food production, Dan and Rachel came up with the idea of Little Tin Co and were committed from day one to producing sustainably sourced products using local Australian ingredients. ‘We took a leap of faith, sold our business, bought a canning machine and started researching and learning how to preserve seafood the traditional way.’

Showcasing original artwork from Adelaide Hills local Ingrid Mangan (which is also available to purchase via their website and features delicious recipes to create with the Little Tin Co seafood), each canned creation from Little Tin Co is available online and ready to be enjoyed and deliver the yum factor to your day. ‘The final products are little packages of umami that we hope you will enjoy wherever and whenever.’
