Seafood, Curanto and cage cooking to shine at Tasting Australia’s Rockstar Lunch

Chefs Trent Lymn (2KW) and Tony Carroll (Fishbank) will be hosting a decadent four-course menu in the Barossa in a very special Tasting Australia experience.

Deep in the heart of the Western Barossa ranges lies Alkina Wine Estate – a stunning, small-scale winery and accommodation awaiting wine connoisseurs and holidaymakers alike. 

Purchased by Argentinian vintner Alejandro Bulgheroni in 2015, the picturesque Greenock property features 60 hectares of farmland, a small vineyard, and stunning views of rolling hills.

Dedicated to honouring the traditional custodians of the land – the Ngadijuri people – Alkina tunes into the geology of the land to understand how to best promote a prosperous vineyard harvest.

This July, Alkina is hosting a very special ‘Rockstar Long Lunch’, where the literal rocks get to shine.

In collaboration with two of Adelaide’s top culinary talents – Trent Lymn of 2KW and Fishbank’s Tony Carroll – Alkina Wines will be hosting a decadent four-course menu, forged in fire and ice, harnessing the properties of schist and limestone.

“The owner is Argentinian, and I have taken inspiration from my own experience in and with Patagonia,” says Mr Lymn.

“I will be cooking in the mines and in the earth, [which is] an integral part of the Alkina wine making. I will [also] be cooking potatoes in the ground.”

Trent Lymn is 2KW’s self-proclaimed unconventional and self-taught chef, with a colourful culinary life story. After cooking in London and across South America, it was in Argentina that he learned the asado and curanto methods of cooking.

“[The menu] will be based on Argentinian food,” says Mr Lymn. “Curanto is a traditional cooking technique that dates way back. It is an indigenous way of cooking vegetables, seafoods and meats, [and I will be] cooking these in the ground. I will be setting up a cage similar to that of Francis Mallmann, an Argentine chef.”

Alongside this uniquely curated four-course menu, guests will also be able to enjoy Alkina’s wines and international fine wine collection, as well as tour one of Alkina’s soil pits for a full immersive experience.

The tour will also provide guests with the unique opportunity to understand Alkina’s micro-terroir approach to winemaking. This refers to how soil (or stone), topography and climate all impact the characteristics and flavour of wine.
