Seed to unveil new bistro as part of their multi-level venue

Seed to open exciting new bistro in their new multi-level expansion in the Clare Valley, with doors opening tomorrow night.

Exciting Clare Valley dining destination Seed has re-opened its much-anticipated new venue in its multi-level renovation, complete with a daytime deli, rooftop bar and now a nighttime bistro, opening Thursday.

After a soft-launch last month with the opening of the rooftop bar, they will now be accepting guests in their bistro, which features a completely mouth watering menu.

Previously a renowned kitchen and winehouse, Chef and restaurateur Guy Parkinson has retained the original Seed ethos of ‘relaxed regional dining’ across the menu and offering, which continues to celebrate simple, quality ingredients both from the region and beyond.

Together with business partners Candice Leighton, Sam Maitland, and Sam Macdonald, as well as Head Chef Louis Ritchie, Parkinson is happy to see their hard work paying off.

“Seed has always been a labour of love for us, and we are excited to finally be open again and welcoming people through our doors,” says Parkinson.

The re-design features a Napoli-style wood oven, a sculptural downstairs bar crafted from exposed brick and poured concrete, interior and exterior murals by Queensland-based artist EJ Zyla.

There is also a cooled wine room in the former bank vault, and a unique-to-Clare, all-weather rooftop bar that offers guests 180 degree views over the town.

Parkinson and Leighton’s original Seed opened in Clare in 2014, and enjoyed multiple award wins, receiving one hat in the Australian Good Food Guide (2014-2019), a Delicious Top 100 ranking (2018), and multiple Awards for Excellence wins.

“It’s nerve wracking launching something new, especially when people have such strong memories of our previous restaurant, but already the
response to our new venue has been incredible, from locals and tourists alike. There’s so much more to come for us – smallgoods and bakery products, for example – but for now, we’re happy to be back doing what we love,” shares Parkinson.

The bistro will be open Tuesday to Saturday from 5.30pm until late. Guests can relax on the rooftop bar from Wednesday to Sunday. The new deli will be launching in early May.

Seed will be throwing their official opening party on May 15 as a part of the Clare Valley SCA Gourmet Week 2021, with $10 entry at the door, which includes a complimentary glass of your choosing.
