For Seven Seasons Spirits founder Daniel Motlop, the differences in the flavour and quality of native Australian ingredients, wild harvested from different locations across Larrakia Country in the Northern Territory’s Top End, is undeniable.
“For 60,000 years, the Larrakia people have lived by the lores of the land and the seven seasons,” he says. “Nature is our clock, the stars are our calendar, and changes in the winds, plants and animals tell us the new season has arrived.
“To this day, we use the seven seasons to tell us when each native ingredient is ready for harvest. The ingredients we use for our four spirits – green ants, bush apples, native yams and bush honey – are collected by Aboriginal harvesters to ensure sustainability and support for local communities.”

To show this connection and the parallels to Country, sustainable harvesting and the bush-to-bottle story, Seven Seasons Spirits joined forces with Dave Apanah from Pendulum Productions to create a master video and series of eight vignettes.
Featuring Motlop and his harvesting team in the Top End, the beautiful productions will be released periodically on Seven Seasons Spirits’ YouTube and social media channels, with each one focused on a certain product and its journey from the bush to bottle.
“The aim of the videos is to showcase what it takes to get Seven Seasons Spirits into consumers’ glasses, the fascinating story behind each product, and how far we travel to source the best and most authentic Australian native ingredients that are then blended with new world flavours,” says Seven Seasons’ General Manager Sandra North.
“We hope to encapsulate the importance of both Country and craft and how the most skilled harvesters and distillers have managed to successfully bring these two elements together. This is Seven Seasons Spirits.”
