South Australia’s most influential chefs gathered with farmers and food industry leaders last night at Soi 38.

South Australia’s most influential chefs gathered with farmers and food industry leaders last night at Soi 38 in Adelaide for a night of innovation and celebration, all in the name of Australian pork.

PorkStar is a program that celebrates chefs’ love of pork, and aims to connect industry innovators and pork knowledge, with the task of challenging people’s perceptions of pork and encouraging new possibilities.

“After cancelling many times due to COVID-19, it feels fantastic to be in one of our favourite cities again. We’re beyond excited to showcase the incredible talent here. Chefs like Terry have continued to innovate with Australian pork through all these uncertain times,” commented PorkStar Marketing Manager, Kylie Roberts.

Ms Roberts added that Soi 38’s Executive Chef, Terry Intarakhamhaeng, is “one of Adelaide’s most creative culinary minds who challenges perceptions around traditional Thai dishes. Terry keeps the authenticity of his regionally inspired cuisine but adds a modern twists to excite the diner.”

Television favourite, fresh from a win on The Block in 2021 and long-time Australian Pork ambassador, Mitch Edwards hosted proceedings and welcomed over 70 guests to an electric evening featuring a very special menu.

Menu highlights included Steam Sago dumpling with pork and peanut inspired by Terry’s childhood, as well as Moo Nam Tok with BBQ pork neck and garden salad. It also included a slow cooked fivespiced pork hock with pickled mustard greens and chilli vinegar with roti and rice, as well as a puffed pork crackling skin with tomato relish. The hero dish being Southern pork ribs yellow curry with betel leaf.

“I am so proud to work with PorkStar and take guests from the industry on a journey of regional flavours. Pork is my go-to in the kitchen, with many traditional dishes incorporating the hero protein. Pork features in some of our most popular dishes at Soi 38 and our most-loved dish is actually the crispy pork belly.” says Soi 38 Executive Chef, Terry Intarakhamhaeng.
