Sôl Rooftop rebrands with appointment of new Head Chef

Perched atop Adelaide’s Sky City Casino, Sol Bar and Restaurant is evolving to include a more casual dining experience with a new Head Chef.

Known for its spectacular views, Sol Bar and Restaurant has become an iconic destination for travellers and locals alike with its prominent façade now an identifying feature of the Adelaide city skyline.

Since its opening in 2020, Sol has become synonymous with top-notch dining and a high-class experience and now, they are expanding to offer a more casual experience – without compromising on quality of course.

A new Head Chef is set to lead the way of the Sol’s rebranding with Sous Chef Rhys Nicholson taking over the top job.

Rhys will be leading the evolution of the highly awarded venue, which relaunches today to cater for all-day dining as well as a broad ‘by the glass’ beverage offering. 

Having previously worked at some of Adelaide’s most coveted restaurants including Press* Food & Wine, Orso, Osteria Oggi and Shobosho and has been an integral part of Sol since it opened, working as Sous Chef alongside Kane Pollard.

His wealth of culinary talent and strong leadership skills have made a strong mark on the team with Rhys crediting Executive Chef Andrew Davies as the person who helped set the foundations of his skill set.

Rhys expressed his excitement for the new direction of Sol saying “We look forward to offering all-occasion dining with a selection of small and large plates, catering to special occasion outings, an afternoon of grazing, or simply dropping in for a glass of wine.

“Each restaurant I’ve worked in over the years has been a little bit different, and I’ve taken knowledge from each venue with me to evolve as a chef, from woodfire grills to Japanese snacks, to Italian fare and Sol’s sustainable fine dining.”

Sol Rooftop mixologists have worked together with SkyCity’s award-winning head sommelier, Jimmy Parham, to present a dynamic list of signature and time-honoured cocktails, rare spirits, and one of Adelaide’s broadest ‘by the glass’ international wine lists.

Jimmy said: “We’re excited to be offering a wide-ranging wine list that can be enjoyed indoors or outdoors, whether you’re waiting to check into Eos, gathering with friends, or on the way to Adelaide Oval or the Festival Centre.

“As well as the international offering, there’s naturally a stellar range of all of our favourite South Australian wines too, from Rockford’s Moppa Springs GMS at $15 per glass, to Penfold’s Grange at $220 a glass.”

Sol Rooftop is Adelaide’s elevated all-day destination perched atop SkyCity, open from 11am – late every day.
