ILA is bringing the magic of a white Christmas to life this December with ‘The Immersive Table: Yuletide’ that blends fine dining and festive nostalgia.

This December, Adelaide diners are invited to step out of the sunshine and straight into a winter wonderland storybook scene as ILA Immersive Light and Art unveils The Immersive Table: Yuletide, a multi-sensory dining experience unlike anything else in South Australia. Following a string of sold-out events, this latest chapter of ILA’s Immersive Table series will transform the underground dining space into a snow-covered scene that captures all the magic and nostalgia of a Hollywood Christmas.

“Immersive Dinners are really a collaboration between everyone here at ILA, our project managers, our tech team, front of house, and the restaurant kitchen. What we’re trying to do is create a truly immersive experience that engages all the senses in the ILA Lab itself, where we can bring any kind of theme to life,” said Aurora Restaurant’s Executive Chef, Robin Wagner.

“For the Christmas theme, the idea was to have a white, snowy Christmas on the screens and bring everyone into that atmosphere. It’s an interesting challenge for the kitchen because my background is European, so I bring that cold-weather, traditional vision of Christmas. But of course, the team here has their own Australian take on it, so combining those two perspectives makes it really exciting.”

Located beneath 50 square metres of LED screens, Yuletide is redefining festive dining through light, sound, and flavour. For $179 guests will enjoy a five-course meal that unfolds as part of a visual and sensory journey. Diners will be surrounded by glowing candles, falling snow and soft lighting that shifts and shimmers with each dish.

As for the menu, the team are keeping it under wraps, but are keeping the focus on combining traditional Australian and European Christmases.

“The menu is still evolving, but my intention is to create harmony between an Australian Christmas and a European Christmas,” said Robin. “I’ll definitely include elements from how I grew up celebrating in Germany, but I’m also getting feedback from the team on how they celebrate Christmas with their families here.

“I want to bring everyone back to that feeling of connection. Of course, it’s warm here, and you’re in shorts and thongs, so you don’t want to be heavy and full, you want balance. That’s a big focus for me, making the meal indulgent but not over the top.”

Unlike your regular sit-down dinner, this will have you up and exploring. “You don’t just sit down straight away, you move through the space and experience it,” said Robin. “It’s not only about the food, it’s a multi-sensory experience. You can see, hear, and even smell everything happening around you.

“The challenge is balancing that immersion without distracting from the food. But that’s what makes it so special, whatever theme we put on, we don’t cut corners. We want it to be unique and unforgettable for everyone.”

The Immersive Table: Yuletide will take place on Thursday, December 18th, from 6:30pm to 9:30pm. Tickets are $179 per person or $230 with wine pairing, and there are limited seats available so you’ll want to get in quick. Vegetarian, vegan, and coeliac-friendly options are available with prior notice, and group bookings are encouraged to secure shared seating.
