JIU Studio Japanese Knife Shop is set to host an exclusive Japanese sushi masterclass on August 28th and 29th, designed to refine sushi-making skills. Participants who ace the course will receive a certification in sushi hygiene and techniques. The event will be held at Erato Teppanyaki on King William Street, and will be led by the esteemed Sushi Master Hirotoshi Ogawa from the Japanese Sushi Association.

Several of Adelaide’s top chefs will be attending, including Jake from Arkhe, Rodrigo from Magill Estate, Adam from Shōbōsho, Charlie from Muni, Ben from Paper Tiger, Krishnil from Tunki, and Simon from Ode.
The two-day course will provide a thorough mix of theory and practical skills. Day one covers theoretical topics like the history of sushi, cooking sushi rice, knife skills, fish handling, ingredient preparation, preservation methods, cutting techniques, sushi making, filling preparations, sashimi creation, and hygiene management.
On the second day, participants will apply what they’ve learned in practical sessions, followed by a written exam. This test will assess their knowledge of hygiene, processing techniques, and raw food handling, with an 80-question format requiring an 80% passing score.
The course fee is $769 per person, and enrolment is on a first-come, first-served basis. It’s important to note that participants should bring their own chef’s uniform, apron, and knives.
