The duo behind vibrant CBD coffee favourite Coffee on Pinks are branching out to their Hills neighbourhood to open Spaghetti Head, a café by day and dedicated pasta restaurant by night, next week

Poised to open October 7, co-owners Ashley Sleiman and Amanda Cordina will be bringing their respective hospitality and cheffing experience to the venture, after opening popular coffee and pastry haven Coffee on Pinks in July last year.

Opening within Aldgate’s IGA complex, Spaghetti House will be heaven for pasta lovers, with multiple fresh pasta dishes created each day, including vegan and vegetarian options as well as daily menus of gluten-free gnocchi dishes.

The venue will be a destination for good quality food in a casual environment, with every pasta dish made fresh in-house each day.

With a focus on using local ingredients, the venue will also be offering takeaway, delivery and pickup, with the Spaghetti Head chefs hard at work behind a vast panel of glass in the open plan kitchen, allowing patrons to watch the comings and goings of the bustling kitchen.

Bringing their much-loved pastry, coffee and sweets from Coffee on Pinks to the site during the day, the night will see the restaurant transform into an atmospheric pasta bar, complete with concrete countertops, dark green accents, booth seating and spaghetti artwork murals.

Co-owners Ashley and Amanda spotted a large gap in the Hills region for new dining experiences and wanted to inject some new life into the Hills restaurant scene, a breath of fresh air amongst the cafés popular with the locals.

Having used their experience with Coffee on Pinks as a learning curve and safe in the universal appeal of pasta the duo couldn’t be more excited about their dream of opening a restaurant finally becoming a reality, wanting to open a venue in their local neighbourhood.
