The team behind the Prospect Neighbourhood venues Anchovy Bandit and Bottega Bandito are opening a sister pizza and wine restaurant in Hyde Park. Taking everything they know and love about pizza, wine and community to a new neighbourhood for locals to enjoy.

Bandit Pizza and Wine is a catchall for the local community where everyone is welcome. A hub for young families, catch ups, celebrations, events, or a casual dinner on a Friday night.

Bandit Pizza and Wine is all about sharing the Italian culinary culture, yet is bursting at the seams with creativity and independence to craft its own soulful traditions, for now and into the future.

Executive chef and co-owner Shane Wilson from the sister venue Anchovy Bandit, (ex-Hentley Farm, Bistro Dom, Orana), have curated the menu with the support of newly appointed head chef Antonino Pruner. The menu will center around fire, whether from the pizza oven or custom hearth and hibachi.

They will be bringing you classics from Anchovy Bandit’s menu plus adding in a fire licked snacks menu fit for even the most perfectly aged Barolo.

“Passionate about life’s pleasures, food being chief amongst them, Italians are creatures of tradition. When it comes to food, they are happiest when things are done right.

“The dining experience will be really theatrical with a big open kitchen and everything coming from the wood fired oven, or off of our custom Hibachi cooking over hot coals. Antonio and I love our pizza but the open flame cooking is what gets me going.” Shane says.

However wines are no second thought at Bandit Pizza and Wine. The wine list has been curated by Big Easy Group sommelier Shaun Lau, centered around bottles of hard to find drops that the team has been collecting and cellaring since 2019, in preparation for a future wine bar.

The list will be made up with wines by local legends from around the state and country as well as some serious Barolo’s, Brunello’s and Bordeaux, all without the stuffy service that can often come along with wine culture.

The Bandit team has been working closely with award winning interior design studio Ctrl Space for the Interior Design, and Divide Agency for the Branding and Marketing.

Bandit Pizza and Wine is open from November 15.
