In the heart of the Barossa Valley on Friday the 7th of April, St Hugo opened its doors to host the World’s Top 50 Academy Chairs. They’re the talented folks from The World’s 50 Best Restaurants Academy, who help compile The World’s 50 Best Restaurants list.*

St Hugo was grateful to be on the list of venues visited as part of their first visit to Australia since the Top 50’s inception 13 years ago.

Academy Chairs ft. Mark McNamara

Hot off the back of announcing the world’s latest best restaurants list, 26 Academy Chairs are visiting vineyards in the Adelaide Hills and Barossa Valley.

The Academy Chairs are meeting with local producers and South Australian chefs, and dining in some of the state’s best restaurants as part of their two day annual general meeting.

At the home of St Hugo, the Academy Chairs enjoyed an exceptional four-course ‘wine to food matched’ lunch experience created by renowned Executive Chef, Mark McNamara.

The unique dishes on Mark’s menu are designed to perfectly complement St Hugo’s bold and powerful wines.

Executive Chef, Mark McNamara said “I am excited that the home of St Hugo was chosen to showcase the best that South Australia has to offer in food and wine to the Academy Chairs. It was our pleasure to show them four dishes from our current menu, all focused on sensational produce from around the state, with the pinnacle being some incredible Waygu grown near Coonawarra that we have matched to our flagship 2010 Vetus Purum Barossa Shiraz.

Mark’s menu for the Top 50 Academy Chair’s included:
• 2016 Orlando St. Helga Riesling Lime cured kingfish with avocado and fresh herbs
• 2012 Orlando St. Harriett Semillon Quail sausage, capers, citrus and mustard
• 2010 St Hugo Vetus Purum Shiraz Seared Waygu, grilled salad and “chips”

*The World’s 50 Best Restaurants Academy is the mechanism used to create The World’s 50 Best Restaurants list. None of the employees of any of the sponsors associated with the awards votes or has any influence over the results. The Academy is comprised of over 1000 members, each selected for their expert opinion of the international restaurant scene. To create the Academy, and give it a fair representation of the global restaurant scene, we divide the world up into 26 geographical regions. Each region has a chairperson appointed for their knowledge of their part of the restaurant world. These chairs each select a voting panel of 40 (including themselves) – ensuring a balanced selection of chefs, restaurateurs, food/restaurant journalists and well-travelled gourmets. All voters, aside from the Academy Chairs and Vice Chairs, must remain anonymous. A minimum of 25% of the panel is renewed each year.
