Australia’s most historic family owned winery opens its doors unlike ever before for an unforgettable evening in the winery’s most exclusive space, Tank 11 & 12. Enjoy Italian flair and hospitality, with a twist, as two of Sydney’s top chefs (Alessandro Pavoni and Giovanni Pilu) are inspired by the Barossa’s heritage and bounty. These evocative rooms, rarely open to the public, reside below the original heritage-listed Administration Building in Angaston and are former concrete winemaking tanks that have retained the unique wine stained patina of their previous lives. 

On the evening Yalumba will unlock the museum for a unique tour of one of the country’s most iconic wine cellars and select a collection of wines to serve throughout the dinner. Dinner will delight and surprise; prepared by two of Sydney’s finest Italian chefs – Alessandro Pavoni (Ormeggio at The Spit, Via Alta) and Giovanni Pilu (Pilu at Freshwater) – service will take an interesting turn during the evening. Pavoni and Pilu will each prepare two courses; first to be served in one tank, before switching halfway through the meal to be served in the second tank.

Pavoni was born in Lombardy (the region of Milan and Lake Como) and has been recognised by The Australian in their Top 50 restaurants and holds two hats from the Good Food Guide.

Pilu was born in Sardinia and relocated to Australia in 1992, bringing a love of simple ingredients and minimum fuss to Sydney kitchens ever since. Pilu at Freshwater was recognised by the Good Food Guide with two hats.

This exciting Italian-inspired menu and the world-class wines will give guests twice  – due volte – as much gastronomic joy in one spectacular evening.

With rich terrain and stunning coastline, the Limestone Coast is home to many incredible experiences; this tour will reveal the gastronomic delights the region has to offer. Board your coach and head straight to Humpalicious Dairy in Robe – an unique, commercial camel dairy, home to a herd of 60 camels. Humpalicious owners and Warwick and TJ will share the health benefits of the camel ‘supermilk’ before guests move on to a different, more traditional, kind of dairy near Mount Gambier. From milk to wine the tour will then go onto Herbert’s Vineyard for a tasting of their famous pinot noir. Guests will enjoy a three course meal cooked by chef Graeme Armstrong with a menu reflecting the places you’ve visited that day or will be visiting tomorrow before settling in for the night. The following morning starts with a fully cooked breakfast then onto Holla Fresh, who produce fresh herbs for commercial kitchens and supermarkets throughout Australia. Next up is Limestone Coast Cheese for a tour and tasting, before the culinary journey concludes at Longridge Olives at Coonalpyn to hear about how their olives are grown, harvested and transformed into extra virgin olive oil. On the night you’ll sip champagnes from Pol Roger, Louis Roederer, Bollinger, Pierre Gimonnet & Fils, and Veuve Fourny & Fils – which will be paired with a five course dinner using top South Australian produce, specifically designed to highlight the power, finesse and textures of the bubbly.

Coming interstate just for the evening is Australia’s premiere Champagne critic, Tyson Stelzer, who will share his knowledge on all things liquid perfection.
