Hyde Park’s newest tasty addition is modern Indian restaurant Javitri, sitting on King William Road.
But forget bowls of curries and copper dishes – Javitri is breaking the stereotype of Indian food in Australia with a menu that combines sophisticated flavour combinations, with elegant, considered plating.
The menu takes Indian flavours and cuisine as its base, and then using Australian produce combines modern techniques, with plenty of inspiration from French and Italian cooking.
So you’ll still find curry on the menu, like the lamb shank korma. But the traditional ghee (clarified butter) in the dish gets a western touch from the addition of truffle oil, which makes for an incredibly creamy and smooth finish.
And when have you ever been asked just how you’d like your meat cooked in your curry? Order the vindaloo, and you can also specify that you’d like your black angus fillet cooked medium rare (or however it is you prefer it).
Owner and head chef Prashant Penkar has more than a decade of experience working at restaurants and under Michelin-starred chefs all over the world, from London to Johannesburg plus at the luxury Oberoi hotels and resorts in India.
Since moving to Australia, he wanted to open a restaurant that challenges the perception of what Indian food can be.
“My philosophy for food is not a fusion, Javitri will keep Indian food contemporary and progressive; we use Indian food as our core foundation,” he said.
“What makes Javitri unique is every component on your plate has meaning and thought behind it, it is presented with our food philosophy.”
