Tucked away in the corner of the city is Sahara Moroccan Casbah, a place that, at first glance, appears to be a humble rug shop. Step inside, however, and you’ll discover the flavours of Morocco, brought to you by owner, Ali Arhbal.
Ali has been selling rugs and handmade mosaics from his store for 23 years. His retail business was one of the first to set up shop at the WOMADelaide and Woodford festivals.
It was after requests from festival friends that he decided to introduce food.
“I’ve always loved cooking,” says Ali, “and people were always asking me. So, I said yes.”
His culinary debut was no small feat and 7 years on he continues to operate from his rug shop.

But what makes Sahara Moroccan Casbah unique is the care and preparation that goes into every dish.
“A lot of people come but I can’t take them because I need at least two days before they come,” he says.
Ali is steadfast in his no-walk-in policy, and his booking system requires persistence, much like repeatedly calling a lover until they finally answer. However, all is forgiven for the personalised catering that awaits.
“Cooking takes about two hours. I don’t do advertising… everything is fresh, no microwaves, no shortcuts.”
Couscous, a staple in Moroccan cuisine, is a labour of love and the longest to prepare, requiring over an hour of steaming to achieve its fluffy texture.
Ali’s approach to food is deeply rooted in his Moroccan heritage, with recipes passed down from his mother. He focuses on creating dishes that cater to all dietary preferences, especially vegan and vegetarian options.
“In Morocco, we don’t eat much meat, so I focus on vegetables and spices… I make sure, especially with people who are vegetarian and vegan, that I give them proper food,” says Ali.
You can expect traditional dishes like pancakes with spinach and feta and, for meat lovers, bastilla with chicken and almonds and the sumptuous slow-cooked lamb tagine offers a flavour sensation that makes you savour every bite.

For Ali, hospitality extends beyond the kitchen, and he welcomes guests into his space filled with handmade Moroccan treasures. The experience is intimate, akin to dining in a friend’s home, with no menus, no rush, and no alcohol.
“You don’t need alcohol to have a good time here. It’s about the food, the atmosphere, and the connection,” says Ali.
