One of the Australia’s most viral cookie bakeries is coming to South Australia, bringing thick, moist, delicious cookies but for a limited time only.
The cookie giant announced it was making its way to SA on Instagram, telling one million followers to ‘save the date’ for May 28. It was cheers and hoorays from keen cookie enthusiasts jumping to get their hands on the sugary biscuits.
The chunky cookies will be popping up in Westfield Marion, from May 28 for four days only, making this something that fans are going to want to line up early for.
The women behind it all is Brooke Bellamy, originally starting the shop in Brisbane, her big cookies went viral pretty much over night on TikTok back in 2023 when she started posting vlog style baking videos. Brooke had already been open for a year before gaining traction on social media but from there she was able to grow her staff, her following, create a cookbook and see her stores go international.
Even Brooke herself will be behind the counter in Marion, serving up what started it all.
“Adelaide has been asking for Brooki for a long time — we can’t wait to finally show up,” said Brooke.
“Four days only, come find us at Westfield Marion.”


Currently Australian stores are located in Brisbane, Gold Coast, Sydney Airport and Melbourne, with a new Brisbane location also on the way.
“Social media wasn’t just a marketing channel; it was a way to let people in, to make them feel part of the brand before they even stepped inside a store,” Brooke shares on her website.
“Brooki exists today because people crave experiences that feel alive, real, and sharable,” she wrote.
Brooki Bakehouse’s cookies have built a cult following, with best-selling flavours ranging from viral sensations to long-time favourites. Leading the lineup is the Dubai Chocolate cookie, which has reportedly been selling out within hours since launch, alongside popular picks like Almond Croissant, New York City Dark Choc Walnut, Nutella Milk Choc Chip, Carrot Cake and Cinnamon Scroll, each bringing Brooki’s signature oversized, indulgent style to flavours inspired by desserts, pastries and classic bakery favourites.
“At its core, Brooki is about authenticity, creativity, and connection — and the belief that a great fresh bake can bring people together,” she continued.
“Every cookie we bake, every store we open, and every market we enter carries that philosophy.”
The bakehouse has seen long lines throughout all new stores opening around Australia and international pop-ups and that will more than likely be the same story for the Adelaide edition of Brooki Cookie.
The pop-up will be open Thursday from 9am to 9pm, Friday from 9am to 5:30pm, and Saturday and Sunday from 9am to 5pm.
