Back in the day, game was something consumed by our parents and grandparents on a regular basis and at some stage in the past 20 years, it disappeared off the foodie radar. When we heard about the Highway’s Game Week, we set our sights on Head Chef, Nick Finn to find out what all the fuss is about.
We caught Nick in the middle of accepting a delivery of almost 300kg of; rabbit, duck, kangaroo, venison and buffalo. “Game was something eaten by the older generation, we don’t eat it so often anymore so we thought we’d bring game back to the future!”
In addition to the Highway’s regular menu, specialty items you can expect to see over the coming week include; braised rabbit croquettes, 5 spice duck shanks, kangaroo pizza, braised venison osso bucco and blackened buffalo eye steak. “[suise chef] Stuart and I have extensive experience in preparing and cooking game and want to expose today’s generation of Adelaide foodies to it’s intense and varied flavours”
Nick and Stuart’s passion for South Australian produce lead them to use Hahndorf venison as the main ingredient in the osso bucco. Hahndorf Venison have been working with venison for over 130 years, supplying an extensive list of local and national restaurants with their fine produce. Teamed with hand made gnocchi, fresh local herbs and pecorino cheese, I was lucky enough to have a taste of this outstanding dish which left me hungry for more!
It’s not only the chefs who have been working tirelessly to create Game Week, the Highway’s Sommeliers, Tony and James have worked with Nick and Stuart to source local and international wines to compliment each dish. “We want to provide Adelaide’s diners with wider options when choosing somewhere to dine. Being a lesser known meat, we wanted to make the dining experience as enjoyable as possible by perfectly pairing each dish to wine available both by the glass and by the bottle”.
