After taking ownership of Adelaide pub The Brunswick, local woman Brooke Sullivan has become South Australia’s youngest female publican.
At the age of 29, Brooke has made a life-changing investment in one of Adelaide’s little gems and aims to bring the traditional ‘local’ back into vogue.
Coming from a family of publicans and plenty of experience in hospitality, Brooke says this career move was always a possibility. “I grew up in hotels; West Thebarton, Southwark and then the Cremorne where I got a taste for hotel management. After two years working in London with Foster’s I came back to Adelaide to further build industry networks and take on a challenge like this in my hometown.
“The Brunswick has always had a good strong client base and a sense of community in and around the hotel – country pub atmosphere in the city. And it’s great to see the locals coming out of the woodwork again” Brooke added.
Both Brooke and assistant manager Rhys Gilbert, have extensive experience in city hotels and they guarantee to beat competitors hands down on old fashioned pub service.
Rhys said, “You won’t find many pubs like The Brunswick left in Adelaide. We’ll match a face with a name and have your drink on the bar before you’re through the door. Most importantly, we’re service with a smile”.
Brooke’s big picture – to make The Brunswick everyone’s local. “Whether you live at the Bay or Norwood, we’re central, we’re all experienced in old school service and we’re all about keeping it simple”.
Brooke and Rhys have already made big changes for the pub; a new wine list with a range of boutique labels, a new chef cooking up a delicious storm of good hearty pub meals, the introduction of local live music, giving blues and roots a push in the city, and the spacious internal walls will soon be used as a gallery hanging space.
Next on the list is a sharp little surprise for the beer garden, although Brooke isn’t keen on letting any details slip just yet. “You’ll have to stay tuned for that one!” she said.
The Brunswick is located at 207 Gilbert Street, Adelaide and is open for lunch and dinner 7 days a week with something special every day.
