Chalk Hill Wines launches Sensory Odyssey, merging music with wine tasting with unbelievable results

Chalk Hill Wines is introducing an innovative new wine tasting experience called Sensory Odyssey, which kicks off from 15th January 2025. This exclusive venture will be held at their scenic cellar door in McLaren Vale, South Australia, offering an immersive journey where wine pairs with sound to enhance sensory perception. The Sensory Odyssey will operate with only two sessions per week, each accommodating ten participants. This initiative follows Chalk Hill’s recognition as the Innovative Wine Tourism Experience Winner at the 2022 South Australian Best of Wine Tourism Awards. The experience promises a novel approach to wine tasting by involving multiple senses in the process.

Tom Harvey, Owner and Managing Director of Chalk Hill Wines, commented on the uniqueness of the program. “It is about discovering the harmony between sound, smell, and even texture,” said Harvey. He further explained that there is a notable connection between wine and music which they aim to explore through custom-curated soundscapes that correspond with each wine’s characteristics and narrative.

Prospective attendees are encouraged to book their spots early through the winery’s website due to limited availability. Chalk Hill Wines boasts a long-standing history in the wine industry, with six generations contributing to its 186-year legacy in grape-growing and wine production. The winery is also known for producing Australia’s Best Grenache, making it a prominent figure in McLaren Vale’s wine scene.

Guests who participated in preliminary sessions of Sensory Odyssey shared their commendations. Annamieke from Divine Domes McLaren Vale praised the Chalk Hill team for their professionalism and the quality of wines, noting that the Sensory Odyssey distinctly positions Chalk Hill in the market. Another guest, Jonathan, expressed his astonishment at how different music tracks noticeably affected the wine’s tasting notes, calling the experience “mind blowing.”

Peter, another participant, was impressed with how the music played during the session enhanced the flavours of the wines. He mentioned that the experience would influence his music choices when enjoying wines at home. Similarly, Ralf recommended the experience for its unique blend of wine and music, planning to return with friends.

Zoë highlighted both the concept and the execution of the tasting event. She appreciated the detailed setup that included textured cards, and commended Ross for being an excellent host.
