Adelaide Central Market’s newest multi-sensory space is on a mission to change the way we think about tasting, shopping, and even slowing down, taking customers on a journey of scent, taste and feeling.
Sensory House is a tightly curated stall that combines a cellar door with a bottle shop, apothecary and an intimate eight-seat cocktail bar. But calling it a stall barely does it justice.
This is a space designed to capture the essence of the Adelaide Hills and release it in the middle of one of the world’s greatest food markets. Sensory House brings together Full Circle Spirits, With Grace Whisky, Rose Kentish Wines and Perfumer Three, showcasing the work of Michael Haddad and Rose Kentish across spirits, wine, whisky and perfume in one interconnected experience.
“It’s an experimental retail experience,” shared Michael. “You’re not just walking into a bottle shop or a perfumery. You’re walking into a space where you feel what you touch.”
From the moment you step inside, the intention is clear. Sensory House is not just about browsing, it’s about immersion.
“You’re taken on a journey of scent and taste and feeling. We were using things like eucalyptus and pine needles, and elements that are used in our gins and spirits, and bringing them into the space and even the stilling process itself into the room. So when you walk in, you’ve got these gorgeous smells, layers of time and place all coming together.”
The result is a layered sensory moment that blends aroma, memory, and place. Even the stilling process of spirits production is embedded in the atmosphere, creating a space that feels less like retail and more like an extension of the Adelaide Hills.
“It’s almost like the receipt of your experience,” said Michael.
“Rose and I have been working together for a number of years. We’ve done producer residencies for Full Circle Spirits in the Central Market about four times over the past five years. They invited us back again, and we were doing a little pop-up.
“We loved it so much, we asked how we could be part of this permanently. And they didn’t necessarily just want a bottle shop. They wanted something more.” Sensory House is exactly that.


Rose and Michael make gin in the Barossa, age whisky in the Adelaide Hills, and source grain from Yorke Peninsula. Everything they make is kind of spread out around South Australia. That geography becomes part of the story, brought together in a single, compact space in the city.
Approximately 95 per cent of what’s on offer is made in-house, from spirits and wines to perfume and candles, with only a small selection of external products rounding out the offering.
“If you don’t get a chance to go to the hills, we’re bringing the hills down to you.”
Even the retail experience is designed to feel personal and guided, rather than transactional. Guests are invited to explore scents, spirits and wines in conversation, with products positioned as extensions of memory and place.
And for those who stay a little longer, Sensory House transforms again.
On Friday nights, the space shifts into an eight-seat cocktail bar, offering an intimate, almost theatrical hospitality experience. Drinks are tailored, conversations are personal, and the boundary between guest and maker all but disappears.
Michael says there’s plenty to choose from, but a Negroni is something never to pass up.
