NOW OPEN: Authentic Mexican street food lands in Brighton as Taco Libre opens its colourful doors

Using a traditional family recipe, Taco Libre is serving up the TikTok famed birria tacos, bringing the passion and vibe of Mexico to Adelaide.

They’re sweet, spicy, gooey and delicious and if you haven’t yet tried birria tacos, you’re in luck because Adelaide just got a brand-new eatery dedicated to the latest buzz food.

Operating out of the Mollymawk space on Seacombe Road, Taco Libre is bringing authentic Mexican to our fair city and although birria tacos may be relatively new in Australia, they have been a staple dish in Mexico for centuries.

Originating in the country’s Western region of Jalisco, birria is traditionally a meat stew-like dish but has since evolved, with cooks taking the stew and stuffing it inside fresh, corn tortillas, adding some cheese and frying it creating a crispy yet drippy flavour explosion.

As is common in cooking, everyone has their own way of making birria, Taco Libre owner Yolanda Mendez focuses on the more traditional recipe complete with a perfectly balanced and moreish tomato-based dipping sauce on the side.

Mexican food is known for it’s fresh, simple ingredients and Taco Libre will be no different. “Our birria tacos are made with authentic tortillas, which are naturally gluten-free and made with just two ingredients: corn and sea salt and then filled with slow-cooked beef, queso, salsa, onion and coriander,” Yolanda wrote in an Instagram post.

Open from 5pm on Thursday – Saturday, the new addition will start as a takeaway-only operation to begin but with outdoor seating and a liquor license on the horizon. Yolanda hopes to bring the true feel of Mexico to the streets of Adelaide with not only her food but also the vibe of the eatery.

For those familiar with South Brighton’s, Mollymawk, you’ll know the bright green serving window well. Already a hub of buzzing activity, Yolanda hopes to strengthen the cafe’s already burgeoning community vibe with the spirit of Mexico. We’re talking sitting on the sidewalk, chatting with strangers and leaving with a full belly and a full heart.

Taco Libre is located at 243 Seacombe Road, South Brighton and is open Thurs – Sat 5pm – 8pm on a walk-in only basis.
