Paracombe is bringing 40 years of wine out of its underground cellar for a rare tasting

Normally only open by appointment, Paracombe’s cellar door is coming to life with a special tasting this October.

Some of Paracombe Wines’ most special drops have spent years ageing beneath the Adelaide Hills, tucked away in underground cellars that visitors rarely get to experience.

This October, the family-owned winery is bringing a selection of those bottles out from storage for a tasting experience spanning more than 40 years of winemaking.

For Spring Cellar Door Weekend, Paracombe is going back to its roots with Past, Present & Future, a wine-focused experience designed to take guests through the story of the family winery, one glass at a time.

“We really wanted to bring Spring Cellar Door Weekend back to our roots and to what Paracombe is all about, creating beautiful wines to be shared and enjoyed with the people you love,” Paracombe’s Customer Relations Manager, Sarah Drogemuller, said.

“There is so much time, passion and care that goes into every bottle, from the vineyard through to the finished wine, and this year we wanted to put that story back at the heart of the experience.”

At the heart of the weekend is Paracombe’s underground cellar, a part of the winery’s history that is rarely opened up to visitors.

More than 30 years ago, Sarah’s parents built the cellars into the side of the hill, using the natural environment to maintain a consistent temperature for storing and ageing wine. Being underground also provides an added layer of protection during bushfires, an important consideration for a winery nestled in the Adelaide Hills.

Today, the cellars hold wines at different stages of their journey, from barrels of ageing wine through to bottled and labelled releases waiting for their moment.

Guests will have the rare opportunity to taste wines brought out from the cellar, including carefully selected aged bottles offering a glimpse into Paracombe’s past.

The Past will sit alongside the Present, showcasing the wines and varieties that represent Paracombe today, while the Future will look ahead with upcoming releases, new and emerging varieties and a taste of where the winery is heading next.

“It’s a chance for our guests to experience something a little different and be part of the next chapter of Paracombe Wines.”

Throughout the tasting, guests can graze on local cheeses and produce, cured meats, house-made dips, marinated vegetables, focaccia and lavosh, all selected to complement the wines rather than steal the spotlight.

And, of course there will be plenty of opportunity to find a new favourite to take home.

“We hope they leave having discovered something new about Paracombe,” Sarah said.

“It’s a really special opportunity to taste wines they may never have experienced before, learn more about how our wines and vineyards have evolved, discover a new variety or favourite along the way, and have the opportunity to take some of those beauties home to enjoy again.”
