Happenstance opens their new tasting room in Thebarton’s Gin Alley

A vibrant transformation is underway in the heart of West Thebarton, a once-industrial area dominated by suppliers and wholesalers. New distilleries, production facilities and tasting rooms dedicated to handcrafted spirits have some now calling Thebarton’ Gin Alley’.

Imperial Measures are there, Ambra Spirits and Storytellers too, but the new kid on the block is Happenstance Distillery, who have just opened their tasting room in Ronald Street, West Thebarton.

Mei Lin Ford and Tim Gilchrist, the founders of Happenstance, met by chance over dinner with mutual friends and decided on the spot that they would start a distillery together.

“It all started with a random conversation over dinner. That’s where the name Happenstance comes, from the serendipity, the happy coincidence,” says Tim.

That was in 2018, and since then, the pair have gone from strength to strength, scoring the Tasting Australia Spirits award and winning golds for both their signature Happenstance Gin and summery Fiesta Gin and silver for their Fireside Gin in the Australian Gin Awards in 2020. 

Mei Lin and Tim have poured their hearts and souls into their craft, ensuring that every product reflects their passion and dedication. From the distillation process to the meticulous bottling, they take the time to nurture their creations, never rushing the process. 

“We’re pretty fussy, and we want to make sure it’s only the best, the most aromatic, the most flavourful,” says Tim.

While juniper and other botanicals form the traditional backbone of gins, Happenstance takes it a step further – infused with the bright citrus notes of lemon myrtle and the berry-like sweetness of strawberry gum, their gins offer a refreshing twist on the classic flavour profile.

“We set out to make what we love and what we drink, and as it turns out, other people love it too,” Tim explains. “I think we have some fun with our botanicals, we put a lot of care into what we’re making, so our products are definitely nurtured.”

Beyond gin, Happenstance has ventured into the realm of sour cherry liqueur, a seasonal product that perfectly complements their core offerings. Mei Lin’s Portuguese partner shared a cherished recipe that forms the foundation of this unique creation. 

Producing approximately 280 bottles last year, the demand for the liqueur remains high among their loyal following. The availability of the liqueur depends on the availability of cherries sourced from Marble Hills Cherries in Ashton, and so far, they have managed to secure sufficient quantities to keep their customers satisfied.

Up until recently, gin festivals were the only way Happenstance were able to showcase their entire range to people. As they prepare for the upcoming Adelaide Gin Festival, the duo are offering festival-goers $10 off any purchase of a 700ml bottle from their range across the weekend.

Since selling their first bottle of gin in December 2018, Mei Lin and Tim have been on a steady journey of growth and evolution, transforming their shared passion into a thriving business driven by a love for what they create. 

The opening of their tasting room is a significant milestone for Happenstance and allows them to welcome visitors every Saturday and offer them the opportunity to experience the flavours of Happenstance firsthand.
