Adelaide are set for another foodie boost with the revealing of five more traders making their way into one of the best markets in the world.
Throughout the year we’ve seen Adelaide Central Market continue to release new traders coming to the $400 million Market Square development in late 2026.
Now the Central Market have released another set, and it’s full of interstate cult favorites and locally loved spots.
The line up includes:
- Ginza Kagari
- Jasper Coffee
- Napolitano Pastificio Italiano
- Sofra Kebab House
- Project Burrata
Project Burrata will already be familiar to plenty of Adelaide food lovers. The concept first tested its signature burrata, featuring a soft mozzarella shell filled with creamy stracciatella, as a Producer in Residence at Adelaide Central Market in 2025, before opening a permanent venue on Wyatt Street.
“The Adelaide Central Market just felt like the perfect next step for Project Burrata,” said Michael Calderisi, Co-Founder of Project Burrata.
Following the recent announcement that its Wyatt Street venue would close, fans now have some good news, with Project Burrata set to make its return as part of the new Market Square precinct.

“Burrata is still quite a niche product in Adelaide so being surrounded by people who are genuinely excited about food made a lot of sense for us.”
What started as a fun experiment has evolved and allowed him to deepened his knowledge of Italian cooking, drawing more inspiration from his grandparents and become increasingly confident experimenting with burrata.
“We want this cheese to be something people enjoy all year round, not just in one particular way, and we want to keep being creative with it,” Michael said.
“We want it to feel fun and a little bit different while still inspired by the Italian roots behind us.”
Project Burrata now serves it across hot and cold bowls alongside everything from ragu and porchetta to seasonal produce and house-made condiments.
“We’ve got some off the wall ideas that we’ve been working on, and the Market is the perfect place to bring them to life.”

Also joining the line up is Michelin Guide-listed ramen restaurant Ginza Kagari, known as one of Tokyo’s sought-after ramen destinations.
Its original Ginza location is tucked away in one of Tokyo’s laneways, with an intimate eight-seat dining room that has attracted ramen lovers from around the world.
Owner William Foo said it’s an exciting new chapter for the ramen spot.
“Adelaide Central Market’s strong connection to food, culture and community makes it a natural home for the brand,” Willaim said.
At the heart of Ginza Kagari is its signature broth, which will be imported directly from Japan to give Adelaide diners the same depth of flavour and quality the restaurant is known for at home.
“We’re looking forward to introducing the Ginza Kagari experience to a new city and becoming part of Adelaide’s vibrant food scene,” William said.

Coffee lovers, particularly those with Melbourne roots, may also recognise Jasper Coffee.
The award-winning Melbourne roaster has been operating for more than 35 years, with a focus on distinctive coffees and creating stronger connections between growers, roasters and the people drinking them.
“For more than 35 years we’ve been roasting coffee in Melbourne, introducing people to distinctive
coffees in a way that feels welcoming, generous and never intimidating,” owner Jasper Parker Trenfield said.
It’s a destination he admits that has been in the books for a long time.
“We can’t wait to start pulling shots alongside traders who care deeply about what they do, and to
contribute to the kind of memorable market experience that brings people back again and again.”


Adding more Italian flavour to the Market will be Napolitano Pastificio Italiano, known for its fresh pasta and carefully sourced ingredients.
The new stall will offer fresh pasta, sauces and plenty of inspiration for home cooks looking to recreate an Italian feast, while also catering to Adelaide’s professional chefs.
Another familiar local name joining the expansion is Sofra Kebab House, one of Adelaide’s longstanding kebab destinations.
Currently based on West Terrace, the business will open a second CBD location at Market Square, serving its traditional Iraqi-Turkish yiros, gozleme and baklava to an even bigger crowd.


Adelaide Central Market General Manager, Fabienne Reilly, said the new traders will join a lineup of
more than 50 new traders.
“It is an exciting time for the Market as we prepare to welcome more than 50 new traders to our
community.” Ms Reilly said.
“The strong level of interest we’ve seen from both South Australian and interstate brands wanting to join the Market as part of our once-in-a-generation expansion, is a testament to our reputation as a national food icon, and to the community we’ve built over the past 150 years.”
