FIRST LOOK: Side Hustle Pizza Gained a Little Sister, and her Name is Ipsilon Deli

After the success of Side Hustle Pizza, Nicholas Barone and his family have showed no signs of slowing down their culinary ways.

Carrickalinga business Side Hustle Pizza has marched closer to the Adelaide CBD, opening a sister business called Ipsilon Deli.

Planting themselves on the grounds of Plant 4 Bowden, Ipsilon Deli had its grand opening on Sunday 9 October, serving peinirli (Peh-ee-neer-li, Greek dough boats) Greek yoghurt with varied toppings, traditional Greek bagels and authentic Greek coffees.

Armed with a residential coffee maker, a portable, handmade pizza oven, his secret dough recipe and his family members, chef-owner Nicholas Barone envisioned big opportunities from the success of his first business in Carrickalinga, Side Hustle Pizza. Read our article about the business here.

Not looking to stop with just Side Hustle, the 21-year old worked for months on the menu and the recipes for Ipsilon Deli. Nicholas employed his family members to truly make this enterprise a family affair, his sister and cousin on coffees and serving, his parents on clean-up and customer feedback and his brother-in-law on social media.

Making my way to Plant 4 Bowden around 10:45am, Ipsilon Deli had already sold out of koulouria (Greek bagels) but I managed to snag the last one. Unlike traditional boiled bagels, traditional Greek koulouria go through a brief dehydration process, get brushed with olive oil and (sometimes) honey and are oven-baked to reach an almost cracker consistency, with a soft interior.

Some of the best sellers of the day were the spicy mince, cucumber salsa & yoghurt peinirli, as well as the standard cheese & bacon. I opted for the shakshuka peinirli, topped with an egg, perfectly-set white with a runny yolk that blended nicely with the red sauce base. The scorching heat of the pizza oven is what achieves that balance of cooked and runny, ideal for eggs.

Ipsilon Deli’s dough partnered with the wood-fired pizza oven gave the char on the peinirli a unique taste that was balanced by the sweetness of the shakshuka and the zest of the cucumber salsa I asked them to add on top.

The prices of Ipsilon Deli are very reasonable, as the generous size of the peinirli is enough to feed two people, more if you are feeding young kids. What makes the prices better is the knowledge of supporting a local business providing a unique experience to local and greater South Australia.

Ipsilon Deli sold out of all their products by 2:30 pm, making for an amazing grand opening to gain a lot of traction.
