This July, winter nights in Adelaide are anything but ordinary thanks to Illuminate Adelaide. Running from July 1st to 19th, this year, there’s an indulgent lineup of events perfect for any local food and drink lover. From seafood dinners and candlelit orchestral evenings to garden feasts, cheese masterclasses and French-inspired cocktails, there’s a whole lineup of experiences that are designed to turn an evening out into a complete night on the town.

Night Visions and dining experience at Botanic Lodge

Night Visions is returning to the Adelaide Botanic Garden, inviting you to step outside the ordinary and into a realm where reality blurs for a special restaging of the city’s favourite after-dark spectacle. As the beating heart of Illuminate, Night Visions transforms the Adelaide Botanic Garden into an immersive journey with cutting-edge light, lasers, projections, and soundscapes.
Make the most of your Night Visions experience by dining at the beautiful Botanic Lodge. A special set menu has been expertly curated for the festival, starting with sourdough, cultured butter and smoked salt, then pickled vegetables with olive oil, soft Jersey curds, salt-baked beetroot and hazelnut. Then Kingfish crudo with lemon verbena dressing, curry leaf emulsion and sorrel.
Mains follow with a beef sirloin and Café de Botanic butter, smoked garlic potatoes, a mixed leaf and garden herb salad and marigold vinaigrette. The meal finishes with a to-go dessert of Grandma’s apple and rhubarb crumble with cultured cream, perfect to enjoy while soaking in all the Night Visions magic.

Ocean To Plate and City Lights

If you’re looking to make a night out of Illuminate Adelaide, this is the perfect combo. As part of Illuminate’s immersive dining series, Ocean To Plate is inviting you to discover the best of South Australia’s coastline where light, sound and flavour come together.
Hosted and curated by Adelaide Convention Centre, the experience combines cutting-edge creative technology with a menu of ocean-inspired dishes showcasing the very best of local seafood and the producers, fisheries, and coastal communities behind them.
The four-course dinner starts with a tasting plate of seared Port Lincoln tuna, Smoky Bay oysters, Port Broughton crab and prawn tian with a split blood orange dressing, pickled baby cucumber and native herb salad. This is paired with a Howard Vineyard Sparkling Blanc de Blancs.
The second course features confit Spencer Gulf kingfish, poached mussels, saffron pomme purée, confit leek, and split beurre blanc, paired with a HATCH Watervale Riesling. This is followed by Black Angus beef tenderloin with lobster, thermidor glaze and triple-cooked potato rösti, burnt sprouts with chargrilled radicchio and a Spook Hill Nor’West Blend Mourvèdre Durif.
The dinner is rounded out with Piña Colada entremets of coconut dacquoise, vanilla sablé, piña colada mousse, white rum gel and a pineapple sorbet.
After dinner, it’s time to head outside and explore Adelaide’s biggest free city-wide spectacle. This year City Lights returns bigger than ever to transform Adelaide’s city streets and parklands with an all-new series of installations. City Lights turns iconic landmarks and hidden corners into a playground of light, sound, and imagination, the perfect way to round out a delicious evening.

Illuminate After Dark & Digital Abyss

If cheese, champagne, and caviar sound like your type of Tuesday, then Illuminate After Dark will be right up your street. Join the legendary Valérie Henbest from Smelly Cheese Co for an ultra-exclusive cheese masterclass, where indulgence takes centre stage inside the Adelaide Central Market.
You’ll be greeted with a caviar bump and champagne and will learn about the history, heritage, production and tasting techniques of the only French Caviar, Sturia Caviar, as well as the traditions behind French Champagne and Cheese.
After this absolutely delicious evening, head to Immersive Light & Art for Digital Abyss. Digital Abyss is an immersive journey inspired by the deep ocean, featuring music by Jacopo Baboni Schilingi. Made by Miguel Chevalier, this glowing digital environment unfolds like a living seascape, with AI plankton projections, robotic drawings, glowing lightworks, and 3D sculptures all reflecting the curious micro wonders of the marine floor.

Symphony of the Senses & Universal Kingdom

An immersive night of music, light, and gastronomy is heading to Illuminate Adelaide as Sofitel Adelaide hosts Symphony of the Senses in the elegant surrounds of Garçon Bleu. This exclusive cocktail event will see a quartet from the Adelaide Symphony Orchestra perform throughout the space, creating a captivating atmosphere where sound and flavour intertwine.
Guests will be welcomed with a curated selection of canapés, starting with SA kingfish crudo and refined French-inspired creations, paired with premium beverages including Pommery Champagne, fine wines, and signature cocktails. As the evening unfolds, the iconic Sofitel Candle Lighting Ritual will illuminate the room, with musicians performing beneath a warm glow of candlelight, evoking a truly sensory experience.
Follow this with a walk on the wild side with Adelaide Zoo’s Universal Kingdom: Ice Age. Universal Kingdom is bringing the chill of the Ice Age to the zoo through puppetry, light, sound, and wonder.
Attendees will be able to wander through glowing glacial landscapes and discover majestic Woolly Mammoths, ground-trembling Dinosaurs, stealthy Sabre-Toothed Tigers and soaring Thunderbirds, while unearthing ancient secrets in an interactive kids zone.
