Indulge in this 6-course botanical mocktail degustation at Clare Valley for Dry July

Warndu Tea and Penobscot Farm have collaborated to produce a high-end mocktail list to complement Watervale Hotel’s six course degustation.

In line with the true vision of the Watervale Hotel, owners Warrick Duthy and Nicola Palmer and the Watervale team have designed a six course degustation for Dry July that makes mocktails the hero we need this month.

While the news of the fantastic culinary abilities of Watervale Hotel Executive Chef Nicola Palmer are no secret, her ability to enhance the flavour profile of not only dishes but mocktails encourages indulgence with or without the need for something “a little extra”.

A collaboration between Warndu Tea and Penobscot Farm, the bio-dynamic, organic farm, growing a wide range of seasonal fruits, nuts, leaves and vegetables supplying the Watervale Hotel, has enabled the team to develop a mocktail list that is paired perfectly with the six course degustation.

The mocktails have been designed to mimic the characteristics of wines – balancing fruit, acid, viscosity and tannin in a refreshing beverage as they blend a Warndu Tea with Penobscot Botanicals.

Flavour profiles that can be enjoyed include fingerlime, Davidson Plumb, Lemon Myrtle and Quandong. All native Australian flavours that make the dining experience at the Watervale Hotel that much more authentic.

The degustation experience includes a tour Penobscot Farm as Mr Duthy and his team share how organics, bio-dynamics and permaculture principles leads to enhanced taste and enriched nutrition.

You will see, hear, feel, smell and taste your way around the farm and understand how improved soil health and effective water retention all lead to better fresh produce, something you’ll appreciate when you take a seat at their table and enjoy the sensational culinary masterpieces.

The dishes will include fresh produce picked that day such as the Penobscot Farm Salad, as well as other farm produce preserved earlier as relishes, sauces, pickles, ice-creams or sorbets.
