Long-time staff member takes over iconic Adelaide Hills pub the Greenman Inn

Soon to be stepping into ownership, Carmen and Ryan are focused on bonfires, slow afternoons and distraction-free dining.

In the Adelaide Hills, where the Green Man folklore lingers in the landscape, a familiar face has taken the reins of one of the region’s most loved pubs.

What began as a celebratory anniversary dinner at The Greenman Inn eight years ago, has now come full circle for Head Chef Carmen Snel, and her partner Ryan. With the handover date on 1 July, Carmen is reflecting on what made her fall in love with the pub all those years ago.

“You go there and you could easily be somewhere else,” says Carmen.

Among the bubbles of hills, bathing in the sunlight that filters through towering gum trees, the Greenman Inn carries a timeless charm. The historic building stands strong and deeply rooted in Green Man folklore of rebirth and renewal.

“I’m part of the community … and the greenman itself has been a big part of my life.”

Beyond the pub itself, Carmen speaks warmly of the mentorship she has received from previous owners Tony and Bronnie. She describes Tony as an easy-going, father-figure presence throughout her time at the Greenman, crediting the pair with breathing new life into the venue after taking on the lease nine years ago.

As she enters her role as co-owner, Carmen is determined to reintegrate the Green Man folklore and spirit into the establishment, while also strengthening the pub’s power as a place of connection.

“Sit down have long lunches, have really good conversations, because there’s nothing to distract you other than beautiful scenery and each other.”

For locals, the pub’s familiar favourites will remain: hearty meats, cold beers, and the relaxed atmosphere it’s known for. However, Carmen is hoping to introduce some extra additions including Friday night bonfires, rich mulled wine, tender meat off the bone and a strong focus on local produce.

“We will try and make it a little centralised hub for local produce and local artisans to sell their stuff.”

The newly built back space is designed to be the perfect open-air destination to celebrate events, make memories and reconnect with loved ones. With it’s large paved patio and vibrant lawns, its expansive acreage is patiently awaiting to welcome wedding and event guests.

The ideas are endless for this space as they are currently awaiting council approval to install a playground and even hope to implement glamping tents, offering visitors the chance to stay beneath the uninterrupted Ashbourne sky.

As Tony and Bronnie hand over the keys, Carmen predicts the transition will be bittersweet. However, she is committed to restoring and carrying forward the values and legacy of The Greenman: nature, renewal and community.
