Viral salt bread trend lands in Hyde Park pop-up with laksa and ube-filled buns

Two Buns is bringing the viral salt bread trend to Hyde Park for one day only, with new Sarawak laksa and ube cheese flavours joining its handmade favourites.

The latest flaky and fluffy viral sensation, salt bread, is about to arrive in Hyde Park with Adelaide pop-up Two Buns returning for its third event in just five months.

The one-day collaboration with L.Law Hyde Park and Whisked Cha Matcha will see the café’s signature Sarawak laksa transformed into a buttery, filled salt bread, alongside a sweet and savoury ube cheese creation.

While Two Buns is still a relatively new arrival on Adelaide’s pop-up scene, owner and baker, Isa, has quickly built momentum while balancing the growing business with her university studies. She first developed the idea in early April before holding her debut pop-up by the end of the same month.

Isa admitted she was nervous heading into the first event, but the experience taught her plenty and encouraged her to return for a second time. Now preparing for her third pop-up, she said many of Two Buns’ popular flavours are connected to her own experiences.

“Food reminds me of so many lovely memories with my family and friends,” Isa said.

“Most of the flavours of Two Buns are inspired by memories of travelling, childhood and my experiences, and I wanted to share it with people.”

The Sarawak laksa salt bread will be packed with tender pulled chicken, fragrant shrimp crumble, spring onion and chilli, before being topped with a lime-infused mayonnaise designed to cut through the richness.

Isa shared that the unusual new flavours took plenty of trialling to get right, “the fillings, what we should put on it, how we should decorate it and how we should make the flavours blend together.”

The second exclusive bun combines homemade ube halaya with mild cheddar, all wrapped inside Two Buns’ signature salt bread.

“We had a lot of meetings together to test the flavours and make corrections to make sure that we were making something not only people would like, but that we love as well.”

Alongside the two collaboration specials, the weekend menu will include several returning Two Buns favourites, including lemon meringue, matcha white chocolate, kaya butter and the OG salt bread. Isa makes everything from scratch, including the kaya used inside the kaya butter bun.

“I don’t like the store-bought stuff, I like to know what I eat.”

The Hyde Park event is unlikely to be the last Adelaide sees of Two Buns, with Isa currently finalising another two or three pop-ups for later this month and September.
